The larder

Here comes the outlay. To make something out of nothing, you’re going to need condiments.

Stock up with this stuff.

The fridge

  • Lemons. I cannot stress this enough.
  • Anchovies (buy a little jar, not a tin)
  • Black olives
  • Capers
  • Tomato paste
  • Harissa paste
  • Shrimp paste (available in all good Asian supermarkets)
  • Gochujang (Korean chili paste)
  • Miso

The spice rack 

  • Chili flakes
  • Basil
  • Oregano
  • Thyme
  • Bay leaves
  • Cumin seeds and ground
  • Coriander seeds and ground
  • Cinnamon sticks
  • Cloves
  • Cardamom pods
  • Garam masala

The cupboard

  • Dijon mustard
  • Pasta (De Cecco is your best supermarket shout)
  • Rice (brown basmati)
  • Tinned tomatoes (Napolina is a good brand)
  • Egg noodles
  • Rice noodles
  • Light soy sauce
  • Olive oil (medium for cooking, extra virgin for salads)
  • Sesame oil
  • Rice vinegar
  • Red wine vinegar
  • Mirin or Shaoxing rice wine
  • Fish sauce
  • White sugar
